Ingredients

  • 3 cups Tomatrio cherry tomatoes, rinsed and halved
  • 1 cup small bocconcini cheese balls, drained
  • 2–3 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • (Optional) A handful of fresh basil leaves or chopped parsley

Preparation

  1. Start by washing and drying your tricoloured cherry tomatoes. Slice them in half to release their juices and add flavour to the salad. Add the sliced tomatoes and small bocconcini cheese balls to a serving bowl.
  2. Next, drizzle the olive oil over the tomatoes and cheese, then season generously with salt and freshly ground black pepper. Gently toss everything to ensure that each piece of tomato and cheese is well-coated with the oil and seasoning.
  3. For an extra burst of colour and flavour, tear or chop a handful of fresh basil leaves or parsley, then sprinkle them over the salad. Serve your Tomatrio Caprese salad immediately as a fresh side dish or a light main.
