Shrimp, Tomatrio Tomato, and Mango Tacos

Ingredients

  • 12 shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chilli powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 8 corn or wheat tortillas
  • 1 cup Tomatrio tomatoes, halved
  • 1 ripe mango, peeled and diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely chopped
  • Juice of 2 limes
  • 1/2 cup mayonnaise

Preparation

  1. Mix the shrimp with olive oil, chili powder, cumin, salt, and black pepper in a bowl.
  2. Heat a skillet over medium heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they are pink and cooked through. Remove from the skillet and set aside.
  3. Heat the tortillas in a hot skillet until warm and slightly golden.
  4. Place some cooked shrimp on each tortilla to assemble the tacos. Then, top with halved Tomatrio tomatoes, diced mango, chopped cilantro, finely chopped red onion, and a drizzle of lime juice.
  5. Drizzle the tacos with mayonnaise.
  6. Serve immediately and enjoy these delicious tacos with fresh flavours!
