Orzo-Stuffed Tomatoes & Roasted Cherry Tomatoes

Ingredients

  • 15 ml (1 tbsp) olive oil
  • 125 ml (1/2 cup) chopped dried (French) shallots
  • 15 ml (1 tbsp) chopped garlic
  • 160 ml (2/3 cup) tomato purée
  • 250 ml (1 cup) dry orzo
  • 310 ml (1 1/4 cups) chicken broth
  • 15 ml (1 tbsp) paprika
  • 1.25 ml (1/4 tsp) chili flakes
  • Salt to taste
  • 125 ml (1/2 cup) grated Parmesan cheese
  • 30 ml (2 tbsp) fresh basil, chopped
  • 4 SAVOURA | Beefsteak tomatoes
  • 2 packages of 12 SAVOURA | Cerizo tomatoes, 150 g each

Preparation

  1. Preheat the oven to 190 °C (375 °F).
  2. In a saucepan, heat the oil over medium heat. Cook the shallots and garlic for 1 minute.
  3. Add the tomato purée, orzo, broth, paprika, and chili flakes. Season with salt. Bring to a boil, then cover and simmer on low-medium heat for 12 to 15 minutes, stirring frequently, until almost all the liquid is absorbed. Stir in the Parmesan and basil. Remove from heat.
  4. Cut off the tops of the Beefsteak tomatoes. Using a small spoon, gently hollow out the tomatoes, leaving about 0.5 cm (1/4 inch) of flesh around the edge. Slightly cut the base of the tomatoes to stabilize them.
  5. Stuff the tomatoes with the orzo mixture, then top with half of the cherry tomatoes.
  6. Place the stuffed tomatoes and the remaining cherry tomatoes on a baking sheet lined with parchment paper.
  7. Bake in the oven for 18 to 20 minutes.
