Crispy Air Fryer Cherry Tomatoes with Spicy Yogurt Sauce

  • 30 ml (2 tbsp) all-purpose flour
  • 2 eggs
  • 60 ml (1/4 cup) Panko breadcrumbs
  • 60 ml (1/4 cup) plain breadcrumbs
  • 60 ml (1/4 cup) grated Parmesan cheese
  • 15 ml (1 tbsp) lemon zest
  • 2.5 ml (1/2 tsp) dried parsley
  • 12 cherry tomatoes (Mini Apéro or Cerizo)
  • 12 small fresh basil leaves
For the Spicy Yogurt Sauce:
  • 160 ml (2/3 cup) 2% plain Greek yogurt
  • 30 ml (2 tbsp) mayonnaise
  • 15 ml (1 tbsp) fresh chopped chives
  • 2.5 ml (1/2 tsp) cayenne pepper
  • Salt to taste

Preparation

  1. Prepare three shallow dishes. In the first, place the flour. In the second, beat the eggs. In the third, mix the breadcrumbs with the Parmesan cheese, lemon zest, and parsley.
  2. Flour a few tomatoes at a time, dip them in the beaten eggs, then coat them with the breadcrumb mixture. Gently shake the tomatoes to remove excess breadcrumbs. Dip the tomatoes a second time in the beaten eggs, then coat them again with the breadcrumbs. Shake gently once more.
  3. Preheat the air fryer to 205°C (400°F).
  4. Place the tomatoes in the air fryer basket, making sure to space them out, and lightly spray them with oil.
  5. Cook the tomatoes for 4 to 6 minutes, flipping them halfway through.
  6. In a bowl, mix the ingredients for the spicy yogurt sauce.
  7. Serve the breaded tomatoes with the spicy yogurt sauce and a few basil leaves.
