Chicken tomato burgers with creamy ricotta-basil sauce

Ingredients

Burger :

  • 4 SAVOURA or SAVOURA BIO Beefsteak tomatoes, halved and seeded
  • 4 chicken fillets
  • 4 slices cheddar cheese
  • 8 leaves Boston or romaine lettuce
  • 1 red onion, thinly sliced
  • Sea salt and freshly ground black pepper
  • 2 tablespoons extra virgin olive oil

Creamy ricotta and basil sauce :

  • – 1 cup quality ricotta cheese
    – 2 tablespoons double cream
    – 2 tablespoons fresh lemon juice
    – 2 tablespoons extra-virgin olive oil
    – 2 cloves garlic, finely chopped
    – ¼ cup fresh basil, finely chopped
    – Sea salt and freshly ground black pepper

Preparation

Tomatoes

  1. Cut a one-inch slice off the top and bottom of each tomato and place on a paper towel to drain slightly.
  2. Carefully remove the seeds from the halved tomatoes and sprinkle lightly with salt and pepper.

Chicken

  1. Season the chicken fillets on both sides with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. Add the chicken fillets and cook for 6-7 minutes on each side, until golden brown and cooked through. Add a slice of cheddar cheese to each fillet during the last few minutes of cooking to melt the cheese.

Sauce

  1. Mix the ricotta, crème fraîche, lemon juice, olive oil, chopped garlic, and basil in a medium bowl. Season generously with salt and pepper to taste.

Assembly

  1. On each tomato half, place a lettuce leaf, a slice of red onion, a portion of sliced chicken and a spoonful of creamy ricotta and basil sauce.
  2. Cover each burger with the other tomato half.
  3. Serve immediately and enjoy with your favourite side dishes.
