Chicken Burger with Goat Cheese and Caramelized Onions

Ingredients

  • 250 ml (1 cup) mayonnaise
  • 30 ml (2 tbsp) La Triade spices (e.g., Méchant Mix)
  • 600 g (about 1 1/3 lb) ground grain-fed chicken
  • 25 g (3/4 oz) goat cheese
  • 15 ml (1 tbsp) olive oil
  • 2 onions, sliced
  • 60 ml (1/4 cup) maple syrup
  • 4 brioche hamburger buns
  • 1 Savoura grape tomato, sliced
  • 4 Boston lettuce leaves
  • Relish, to taste

Preparation

Burger
  1. Preheat grill to medium-high heat (220°C – 425°F).
  2. Mix mayonnaise with half of the La Triade spices in a bowl.
  3. Mix remaining spices with ground chicken in another bowl. Shape into four patties.
  4. Place a non-stick grilling sheet on the hot, oiled grill, then add the patties.
  5. Close the lid and cook for 10 to 12 minutes, turning occasionally, until the patties are no longer pink inside.
  6. Turn off the burners. Add goat cheese to the patties.
  7. Close the lid and let rest for 5 minutes until the cheese melts.
  8. Meanwhile, heat oil over medium heat in a pan. Cook onions for 5 to 7 minutes. Add maple syrup and stir. Continue cooking on low heat for 4 to 5 minutes until caramelized.
  9. Toast the buns on the hot, oiled grill.
  10. Assemble the buns with spiced mayonnaise, chicken patties, caramelized onions, tomato slices, lettuce leaves, and relish.

  2. Cut 4 to 6 yellow potatoes into sticks.
  3. Spray air fryer basket with cooking spray.
  4. Place potato sticks in the basket.
  5. Cook for 20 to 25 minutes, stirring halfway through.
  6. Serve with remaining spiced mayonnaise and 125 ml (1/2 cup) ketchup.
  7. Dice 1 Savoura grape tomato and 1/2 Nordic cucumber.
  8. Slice 1 Boston lettuce.
  9. Mix diced tomato, cucumber, and lettuce with 80 ml (1/3 cup) of your favorite dressing in a bowl.
