Fluffy Strawberry Muffins

Ingredients

1 bag blueberry and oatmeal muffin mix from Cora Déjeuners
(you’ll also need ¾ cup milk or plant-based beverage, ½ cup vegetable oil or melted margarine, and 2 eggs)
1 container Savoura strawberries, finely diced

Preparation

Preheat the oven according to the instructions on the muffin mix package.
In a bowl, whisk together the milk, vegetable oil and eggs. Add the muffin mix and stir just until the batter is moistened. Gently fold in the strawberries, without overmixing.
Bake for 18 to 20 minutes, or until a toothpick inserted in the centre of a muffin comes out clean.
Let cool slightly before unmoulding.
Top with sliced strawberries, if desired, and enjoy
