Delicious Shakshouka with Cocktail Tomatoes

Ingredients

  • 250 ml (1 cup) Savoura cocktail tomatoes, halved
  • 1 medium onion, finely chopped (about 150 ml / 1 cup)
  • 2 garlic cloves, minced (10 ml / 2 tsp)
  • 30 ml (2 tbsp) olive oil
  • 3 eggs
  • 5 ml (1 tsp) sweet or smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 10 ml (2 tsp) fresh cilantro or parsley, chopped (for garnish)

Preparation

  1. Heat the olive oil in a large skillet over medium heat, then sauté the onion for 2 to 3 minutes, until translucent.
  2. Add the garlic and paprika and cook for 1 minute to release the aromas.
  3. Stir in the cocktail tomatoes and simmer for 5 to 7 minutes, until softened and the sauce thickens slightly. Season with salt and pepper.
  4. Make 3 small wells in the sauce and gently crack an egg into each one.
  5. Cover and cook for 5 to 7 minutes, depending on how runny you like the yolks.
  6. Sprinkle with fresh cilantro or parsley and serve hot, straight from the skillet or in shallow bowls.
